Ingredients
  

For the Nuggets

  • 1 can chickpeas 15 oz, drained and rinsed
  • 1 cup rolled oats use gluten-free if needed
  • 1/2 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp cumin
  • salt and pepper to taste
  • 1 tbsp olive oil or flaxseed oil

For the Coating

  • 1/2 cup breadcrumbs use panko for a crunchier texture
  • 1 tbsp nutritional yeast optional, for cheesy flavor

Instructions
 

  • In a large mixing bowl, combine the drained chickpeas and oats. Mash with a fork or potato masher until a chunky texture forms.
  • Stir in the chopped onion, minced garlic, paprika, cumin, salt, and pepper. Mix well.
  • Shape the mixture into small nuggets or patties, about the size of a golf ball, and flatten slightly.
  • In a shallow bowl, mix breadcrumbs and nutritional yeast. Coat each nugget in the mixture.
  • Preheat the oven to 400°F (200°C). Place nuggets on a lined baking sheet, drizzle with olive oil, and bake for 20–25 minutes, flipping halfway through.

Notes

Try substituting chickpeas with lentils or oats with almond flour for a different flavor and texture. Customize the spices to your taste!
