  • 4 ripe bananas mashed
  • 1 cup all-purpose flour can substitute with whole wheat flour
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon adjust to taste
  • 1/2 cup unsalted butter melted
  • 1/2 cup oats optional, for texture

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until relatively smooth.
  • In another bowl, mix the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  • Mix the melted butter with the dry mix to create a streusel topping. Stir in oats if using.
  • Fold the dry ingredients into the mashed bananas gently until just combined. Pour into a greased 8x8 baking dish.
  • Spread the streusel topping evenly over the banana mixture.
  • Bake for 30 minutes or until golden brown and a toothpick inserted comes out clean. Let cool slightly before serving.

Notes

For extra indulgence, serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
